Chupe de Pollo (Chicken, Cheese and Corn Chowder)


The Chicken, Cheese and Corn Chowder is a traditional Venezuelan Cuisine. The ingredients used for this Delicious recipe are Fresk-O Fresh Cheese, Chicken, Corn Cobs, Milk, cilantro and potatoes.
You can also make it with shrimp (Peruvian Typical Dish) and Hen.

Ingredients: (8-10 people)

- 500 Grs Fresh Cheese Fresk-O
- 1 large chicken or 6 chicken breasts with bones and skinless.
- 3 Cob Corns cut into wheels
- 350 Grs Sweet Corn Kernels
- 2 Garlic Cloves
- 1 Package of cilantro
- 2 Onions
- 8 cups water
- 6 large potatoes, diced
- 2 Tablespoons Butter
- 1/2 Lts. Milk
- Salt to taste
- 120 minutes

 

Directions:

Place eight cups of water in a large pot (7Lts. pot) Chop into pieces the chicken, remove the skin if necessary and boil in water with the corn wheels , chopped onions, the stems of cilantro, crushed garlic and salt. Boil for about an hour and then remove the chicken and pieces of corn wheels. Cool and strain the broth. Chop the cooked chicken into cubes. Chop the potatoes into dices and cook in chicken broth for 10 min.. Chop the leek in slices (the white part), sauté in two tablespoons of butter and add to the broth. When everything is cooked, add the minced chicken, corn kernels, and pieces of corn cob. If necessary, season with salt to taste, let stand for 10 Min. When serving, heat the soup High, add milk and pour into an individual bowl, add the diced Fresco Cheese Fresk-O, and minced cilantro in the Top !!! Delicioussss!!!
